Taco In a Bag – The Adventure of Hinton Railroad Days

Very quickly because I’m on vacation but will be documenting this trip because the next 10 days will be epic!

The Back Story

We (my husband, his 2 brothers and when we are luck his sister and all of their spouses) have been visiting the sweet town of Hinton, West Virginia each year for the past several years. Harry’s mom and dad (who we call Father John) moved here from NY about 8 years ago and his other sister and her husband joined them a few years later. We take advantage of their annual street festival Hinton Railroad Days, to come together and enjoy food, family and fun.

I cant remember if it was 3 or 4 years ago, but we all enjoyed a delicious snack from a street vendor (I think it was the 4H Club) who sold us Taco in a Bag. The simple recipe is crushed Doritos, taco meat, cheese, lettuce, tomato and salsa and sour cream if you wish – served right in the fun sized Dorito bag! Genius, right?

Each year after that when we went back we looked forward to this treat. (I know, we’re not that hard to please.) BUT, each year NO TACO IN A BAG!

I’m not sure which one of us it was, but someone made the suggestion that we should become vendors at the next RR Days. It was probably meant to be a joke. But, low and behold, after a year of planning, obtaining a vendor permits and food handling certifications, we are here. We are actually going to sell Taco in a Bag at Hinton Railroad Days.

To make this a little sweeter, we have decided to donate a portion of our proceeds to Walk For Her Lifetime, (Find them on Facebokk) a charity that has become special to us.
